Butter-roasted cauliflower

These golden cauliflower florets may be small, but their flavor is mighty! Butter-
roasting infuses cauli with a nutty flavor that melts in your mouth. The texture of
potatoes minus the carbs. So get cooking…

Ingredients

900 g cauliflower
140 g butter

salt and pepper

 

Instructions

-Preheat the oven to 400°F (200°C). Trim and cut the cauliflower into small florets; the
smaller, the quicker they will be done.

-Place in a large baking dish. Salt and pepper to taste.

-Cover with thin slices of butter. Bake on upper rack in the oven and roast for about 20
minutes or more, depending on size of the florets.
